A few words about the olive press
The olive tree is a symbol of the Mediterranean culture. The olive tree's main product, olive oil, is often used in Mediterranean
cuisine. Many other products are made from the olive tree, such as soap, body oils, shampoo and furniture from its woood.
Olive oil also plays an important role in the rites of the Greek orthodox church. Hence, the olive tree was very important
to the way of life on Naxos and in the Mediterranean region in general.
The olive press is commonly known as "liotrivia" in Greek. However, on Naxos, the olive press has two names depending on its location."Fabrika" or "tri(g)os". There are 90 manual olive presses on Naxos.
There are currently no manual olive presses
in operation. many of the structures that contained the manual olive press have been converted into residences.
The Lianou Olive Press is located in Eggares, just off the main road.
It was fully restored by the owner Nikoletta Antoniou Lianou with the help of her husband, Gianni Sp. Protonotarios, who is a civil engineer. The structure containing the olive press is made of stone and has two
rooms that measure 100 square meter. There is an audio-visual presentation of olive oil production and an exhibition of the numerous products made from the olive tree.
